Its been over a week and no post!

Ok so I have been baking a bit since my last post but its been stuff that you have already seen so I thought I would give it a break and give you a little something different.

I was in a competition at school called the JMI Challenge.  This was for all entrepreneurship majors (which is one of my never ending majors) in which we were given $25 card to Home Depot and we had  1 week to create as much value as we could.

My group got the ingenious idea to create and sell tomahawks for the game.  All it was, was a painted paint stick, electrical tape and laminate samples and viola there you have a tomahawk.

So we sold tomahawks and water at the football game.  We also had freeze pops we sold.  The guys in the group also cut firewood for like 4 hours!  But since I am incapable with a hatchet I did what I do best... I baked.

I made the red velvet cupcakes and the marshmallow flower ones again.  I was hoping to experiment some but with limited time I had to go with what worked.  I ended up making approx. 50 cupcakes total! (including mini)


I did improve on the icing of the cupcakes over my previous batch.

Overall our team "created" a gross profit of $1,009! We won 1st place with a prize of $750!  And now I'm invited to a leadership and scholarship dinner banquet for winning!

Weddings Showers Bring Cupcake Flowers!

So today was my good friend Lauren's bridal shower so I naturally had to bake.  Unfortunately I was sick today so I just dropped these bad babies off at the shower and returned to bed.  I cut the marshmallows and baked the cupcakes the day before and just decorated them today.

I think that these would be great as mini cupcakes because they would be would just be so cute and easier to decorate.

Tonights Adventure

So once the baking bug bites it just doesn't want to let go!  Tonights dish was red velvet cake.  But not just any red velvet cake, but mini-cupcakes and a mini cake to be exact!  Be ready to be overload with delicious awesomeness!

Don't forget the cake!  It could be a little cleaner but I was decorating it during commericals because I was watching a show with my roommates.

A Few Days Ago

Hello All!

Forgot to update this yesterday so here will be a post quickly followed by another post.

Yesterday I got the bit by the baking bug once again.  One of my favorites is lemon poppy seed muffins, not unfortunately I did not have the mix that I usually buy that has a lemon glaze with it (it goes awesome with the muffins or poppyseed bread) so I figured I would do something different.  After searching the web for a bit I decided to make lemon poppy seed cookies!

These cookies didnt last but one day! So delicious!

Another night

So this time dear readers my influence for baking was not for pure joy but more for a cause.

Tonight at the BCM we played an intense game of capture the flag which resulted in 2 people going to the hospital, one of which is a dear friend.  At the time it was concerning, one was fine with just a gash in her head and the other couldnt move his jaw.

How do I deal with these type of situations? I bake.  I'm not the best in coping with stress and sometimes don't know how to react when others are hurt so I just do what  I know well.

Upon secretly asking Olivia's boyfriend Alex what her favorite cookies were I knew what I must do.  I quickly went to the store and proceeded to make these homemade chocolate chip cookies, and I got the recipe from one of my favorite sites bakerella.com







Luckily after I finished my baking I received a text that they both are good.  Olivia had to get 7 stitches, while Jai (the one who couldn't move his jaw) received 8 and his jaw is swollen.

My Creation

So yesterday was a double day of desserts.

First of all I was bored and wanted to make something but didnt want to go to the store.  So I used what I had:
Eggs, sugar, jello and pie crust.  I ended up combining them all together to make a new creation.  I combined eggwhites, sugar, and jello powder to make a merangue.  I  put that in mini cupcake pan ontop of pie crust, I also made jello merangue cookies.

They ended up pretty good but arent good if kept for long because they get soggy.

Then after watching Food Network for a couple of hours my roommate and I decided to make brownies!  And these werent your typical "brownie mix" brownies.  These were made from scratch!
